Weekend Bakes: Banana and Oat Cookies

bananacookies

Helping Baya baking some chocolate cakes at the weekend, I really wanted cake! I’ve been trying to eat clean and healthy, and I’ve been doing great lately [apart from when we were traveling!] Banana bread is one of my favourite things, but I’m trying not to eat so much wheat, so I figured I’d do a little experimenting and see what I could come up with!

The end result was really yummy. With just banana, peanut butter, honey and rolled oats, with a little added spice, they were easy to make and tasted pretty darn good too. Perfect guilt free snack with a cup of tea in the middle of the afternoon [or morning, evening or lunch!!]

[yumprint-recipe id=’6′]I’m thinking these would make a great base for a healthy cookie… you could leave out the cinnamon and ginger, add in chocolate chips and a little vanilla, or add dried fruit and ginger…. endless possibilities!

I am absolutely making some of these! I too love banana bread, but I do tend to lack all self control while eating it and before I know it, half a loaf is gone in one sitting! But these cookies with tea sound fabulous.

These look delicious. We already have some oats in the kitchen that we were going to use for cookies. Would it be possible to make them without the peanut butter or does that act as a binding agent?

The peanut butter helps to bind it together, not sure how they’d hold up without it!
