Quick Cookies – two ways
Some days just call for milk and cookies…

When things have to be fitted into nap time, quick recipes are the best. This is our favourite cookie recipe – quick and easy to make, and it’s easy to change around for different cookies. This time we made chocolate cookies topped with smarties and some cinnamon cookies. These are great too as they are eggless!
I N G R E D I E N T S
170g margarine or butter
115g caster sugar
1 teaspoon vanilla extract
225g plain flour
50g rolled oats
M E T H O D
1// Cream the butter and sugar together, mix in the vanilla essence 2// fold in the flour and the half of the oats 3// shape into golf ball sized pieces and roll in the remaining oats 4// place on a greased baking tray and flatten slightly 5//bake at 180C for 15 minutes
For the chocolate cookies we switched the oats for some cocoa powder and pushed in a couple of smarties once flattened. For the cinnamon cookies we added 1 tsp cinnamon and 1/2 tsp ginger.
