Quinola Salad

I’ve been *trying* to eat a lot more salad, and a lot less bread lately…. it’s all too easy come lunch time to reach for the bread and throw together a quick sandwich. Instead, I’ve been making up big portions of this yummy quinoa salad that will last a few days. I’ve been using packets of ready to use Quinola, my favourite is the pearl and black quinoa mix. We’ve also tested out some of their kids ready meals – we really loved the Thai one, it’s great to have a quick ready to go meal in the cupboard that’s actually good for you and not full of junk!

I N G R E D I E N T S

1 packet Express Quinoa
1/2 cup sweetcorn
3 spring onions
1/2 cup chopped cherry tomatoes
1/2 cup chopped bell peppers
1/4 cup mixed seeds
1 lemon
1 lime
1/4 cup chopped corriander

M E T H O D
Put the quinoa in a bowl and squeeze over the lemon and lime juices, mix thoroughly.

Add in all the salad veggies and stir

Sprinkle with the corriander and serve!
