Oh my goodness! I had to make some gingery, Christmas pudding inspired cupcakes! These turned out SO delicious {I may have eaten rather a lot}. I made mini cupcakes – probably a mistake as you can convince yourself that it was only a bite so you can have a third {or fourth}. Still… they tasted perfectly of Christmas with a little ginger and mixed spice, and on a cold, frosty day make for the perfect accompaniment to a cup of coffee.

They’d make the perfect centerpiece to a buffet table too, I’ll be making more of these over Christmas I think!

I’ve been wanting a stand mixer for a while, and Domu recently sent us one to review. This past week we’ve been testing out this VonShef Stand Mixer. It’s been a hard job – I mean, having to mix lots of cakes to make sure it works!? I’m impressed though, not only does it make mixing cakes super quick, it also comes with a dough hook to take the hard work out of making bread/pizza dough. I love fresh baked bread, but really don’t like all the kneading! The mixing bowl is a generous size too, and it has a cover so that flour doesn’t fly out all over the place when you’re mixing away!     Oh I would love one of these. I really want to make my own fresh bread one day but the thought of kneading dough really does not appeal.

    I’d make madeleines: I make them every Christmas morning, and as the first stage of the batter takes 10 minutes to whisk, a Vonshef stand mixer would allow me to get on with other things while the machine works its magic
