Recipe // Easy vegan bean and sundried tomato pate

Since lockdown, I’ve found myself being a little more creative in the kitchen. Unable to just pop to the shops every couple of days, I’ve been delving more and more into my pantry and creating something out of the things I already have.

Last week I made this pate… and oh boy was it tasty! Oren loves it just as much as me. We’ve had it on freshly baked sourdough bread, on crackers, on jacket potatoes… it’s easy to adapt to what you have on hand, and is packed full of goodness too.

I N G R E D I E N T S

6 or so sun dried tomatoes

1 can of white beans {I used butter beans, but any work}

a little of the oil from the tomatoes

herbs {I used a mixed herb blend}

M E T H O D

Drain and rinse the beans, add to a blender with tomatoes, some of the oil and herbs. Blend until smooth, adding a little more oil if necessary.
