Papa and I have been trying to cut out dairy products this past month or so – well, really just cheese. We don’t drink cows milk anyway, and we use a vegan spread. But cheese is our downfall. It’s so darn tasty. Anyway, we decided enough was enough, and we’ve had a good month of barely eating any. So now I have a fridge full of the stuff as we used to eat it with every single meal. It’s only when you stop that you realise just how often you cook a meal and throw a handful of grated cheese on top. Just because.
We switched to a vegan pesto too, which tastes just as good as the cheesey one. This tart is one of my favourite things to eat. I always keep a packet of ready rolled filo pastry in the fridge, this is so quick and easy to throw together and is a great way of using up any random pieces of veg sitting in your fridge.
