When I was a little girl, we used to have a big bonfire every year. We would start building it months before November, and as the fire grew bigger and bigger, our excitement would grow too. I used to have a Mr Men and Little Miss Cookbook, I can’t remember what recipes were included in it, other than this peppermint creams recipe. I would make a batch of them every single year for our bonfire party.

Miss Lola and I made a batch at the end of last week, to take back home to our family bonfire this weekend gone. It’s the first year for a very long time, that I’ve celebrated bonfire night with all my family and I thought it would be nice to rekindle a tradition from childhood. It’s amazing to be able to share memories with my girls, to do things with them that I remember doing with my mama. Keeping traditions alive and passing along the stories to another generation.

Peppermint Creams Recipe

You’ll Need:

1 egg white
1/2 lemon, juiced
1 tsp peppermint extract
12oz icing sugar

Whisk the egg white until fluffy and there are soft peaks. Then mix in the lemon juice, peppermint extract and icing sugar until it all comes together in a nice dough. We also added in a couple drops green food colouring.

Roll out on a surface covered in icing sugar, to approx 1/2cm thickness. Cut out with cookie cutters, place on a tray and allow to chill in the fridge for a couple of hours.

We probably should have made a bigger batch of peppermint creams- these only lasted five minutes! Could have used one or two today for our return train journey home ;)

    Oooh they look yum! I’ve never tried peppermint creams but as a child I always thought they looked delicious, I may have to indulge my inner child and follow your recipe. :)
