Cherry Almond Cake

Oh what a perfect weekend it was! Sunshine., friends, bbq’s, music, paddling pools, chilling – everything you could want! Life seems so much more laid back when the sun is out, it’s been gloriously warm here – in the 70’s which is hot hot hot for North Wales! We’ve been soaking up every second of it. Saturday afternoon, the pub next door had bands playing in their garden, which borders ours…. so friends round, bbq on… we enjoyed listening to some great local music :)

The little two kiddos and I took a stroll to the carboot sale on Sunday morning, found a few bargains, including brand new DM’s for Miss Lola! We baked on friday, before we went to watch the band in the park… I’d picked up these cherries on the market, and had a yearning for something almondy so I made it up as I went along and this is the result!

I N G R E D I E N T S

1 pie crust {i make my own – 4oz flour, 2oz butter rubbed together, add a tbs water until it forms a dough, roll out and line your greased cake pan, pre-bake for 5 mins at 180C/350F for five minutes before adding the cake mix}
Cherries, halved and de-pitted
4oz butter
4oz sugar
2 eggs
2oz self-raising flour
1/2 tsp baking powder
2oz ground almonds
1/2 tsp almond extract

Beat the butter and sugar together until fluffy, then mix in the eggs. Fold in the remaining ingredients. Line the base of your pie crust with the halved cherries, then pour the cake mix over the top. Baya added a cherry on the top!

Bake for approx 25 mintues at 180C/350F until a skewer comes out clean. I ate mine with a dollop of natural yogurt – delicious.
