Spiced Pear Cake

This was actually Fridays cake, but hey! Weekends seem to fly, Saturdays are taken up with kiddos groups and yesterday we headed to Techniquest with friends for the afternoon. The weather felt almost autumn-y – wet and a little chilly, this cake seemed to fit perfectly, plus I had the ingredients in the cupboards! We’ve another full week ahead of us – what do you all have planned?

pear and ginger cake

I N G R E D I E N T S
6 oz butter
6oz brown sugar
6oz plain flour
1 tsp baking powder
3 organic eggs
1 tsp ground ginger
1/2tsp ground cinnamon
1 tin pear halves {in juice}

Beat the butter and sugar together until fluffy, add in the eggs one at a time. Fold in the flour, baking powder, ginger and cinnamon. Add 1-2 tbsp of the juice from the pears.

Butter and flour a 9 inch cake pan, arrange the pear halves along the bottom. Pour over the cake batter and bake at 180C/350F for 35-40 minutes, until a skewer comes out clean.
