Lime Cheesecake bites

Weekends are for cakes, right? We have a little more time, and often have friends round, so for us, the weekend is the time to bake and have fun! This weekend I made some Lime Cheesecake bites. Papa is away at a music festival this weekend, so it was just me and the kiddos. The girls made another batch of these delicious organic muffins, and I made these {mostly} just for me! I kinda made them up as I went along, but they turned out delicious – they’d be perfect for parties.

You’ll Need:

half batch of digestive biscuit dough {i made 12 bites and had enough dough left to make a few biscuits too}

1/4 cup cream cheese

1/4 cup double cream

1 cup icing sugar

1 tsp lime juice

Mix the biscuit dough up, take a ping-pong ball sized piece of dough and squish it into the base of a muffin tin {i kinda spread it up the sides to make a cup shape}. Bake as directed and allow to cool completely.

Beat the cream cheese, cream and lime juice together, then mix in the icing sugar – the mix should be fairly stiff. If it’s too runny, add a little more sugar.

Place a generous dollop of the cream cheese mix on each biscuit base, I also added a drizzle of caramel sauce. Pop in the fridge to set for a couple of hours and then enjoy!
