Homemade digestive biscuits
the
you’ll need:
200g oats
200g wholemeal flour
200g butter
120g brown sugar
pinch of salt
1.5 tsp baking powder
75-100ml milk
blitz the oats in a blender/processor until they’re mostly broken down. mix with the flour, sugar, salt, baking powder and butter. then slowly add in the milk, a little at a time, until the dough comes together.
chill for 30 minutes, roll out to about 4mm thick and cut circles out {or any shape you like!}
bake at 180c/gas mark 4 for around 10 minutes, until just golden on the edges. transfer to a cooling rack. once cool, you can top with a little melted chocloate if you like. or left plain, they go great with cheese.

April 10, 2013 at 08:47@ Rachel … I think you’d need more milk if using gluten free flour … it tends to be drier. Love a good store cupboard recipe Polly, thanks for sharing x x x
