Homemade digestive biscuits

the good ol’ digestive… plain, un-fancy maybe… but they taste so good! i’ve tried to make them once before, but they didn’t come out great… this time? oh boy were they good!! we topped half with chocolate, and none of them saw the day out!

you’ll need:
200g oats
200g wholemeal flour
200g butter
120g brown sugar
pinch of salt
1.5 tsp baking powder
75-100ml milk

blitz the oats in a blender/processor until they’re mostly broken down. mix with the flour, sugar, salt, baking powder and butter. then slowly add in the milk, a little at a time, until the dough comes together.

chill for 30 minutes, roll out to about 4mm thick and cut circles out {or any shape you like!}

bake at 180c/gas mark 4 for around 10 minutes, until just golden on the edges. transfer to a cooling rack. once cool, you can top with a little melted chocloate if you like. or left plain, they go great with cheese.

    These sound quite good! I can imagine a Nutella topping would be amazing, less healthy, but AMAZING! ;)

      oh yes!!! my little two don’t like nutella, but we had a little on top of a couple of the plain ones and it was YUMMY!!

      i havent’ tried honey, but i use nut milk when i make mine :)

    @ Rachel … I think you’d need more milk if using gluten free flour … it tends to be drier. Love a good store cupboard recipe Polly, thanks for sharing x x x
