Ice-cream sundae
While we don’t always have dessert after dinner, sometimes it just has to be done, right?! Sunday is our family picky dinner day, eaten in front of the TV {our current family watch is Anne with an E}. We usually bake something or make a special dessert to enjoy after. There is nothing like a ‘fancy’ dessert to bring a big smile to the kids faces, and last week we enjoyed these tasty ice-cream sundaes!
- Dip the rim of a wine glass in water, then in sugar to create a coated rim
- Crumble some biscuit {we used homemade digestives} into the bottom of the glass
- Add a couple of scoops of your favourite Alpro ice-cream – we opted for tasty Coconut in these
- Drizzle some Sweet Freedom chocolate syrup over the top, sprinkle some Chia Seeds and crushed walnuts
- Pop a cherry on the rim for extra jazz and enjoy!
Quick Ice-cream sandwiches
These were the perfect post-BBQ treat, eaten in the garden quickly before they melted in the heat!
- Take two of your favourite biscuits or cookies {Hobnobs are current favourite!}
- Spread one with a little Sweet Freedom Chocolate Spread
- Scoop a little ice cream onto the chocolate covered biscuit, and top with the second biscuit.
- Roll the edges of the ice-cream sandwich in sprinkles
Healthy Banana Bread and Ice-cream
Some days you just need a little comfort food, when I’m tired or stressed out, there is nothing quite like a bit of cake to soothe my frazzled nerves. This quick and healthy banana bread hits the spot without any of the guilt of a tonne of refined sugar – and is perfect as I don’t eat wheat either.
- Mash 1/2 banana in a bowl
- Stir in 1 tbsp coconut fl0ur, 1 tbsp nut butter and 2-3 tbsp non-dairy milk
- Pour into a greased ramekin and bake at 180C for 10-15 minutes.
- Dish up and top with a spoonful of hazelnut chocolate Alpro ice-cream
