Nutty Apple Porridge

My favourite {lazy} breakfast is peanut butter toast. Since I’m trying to eat healthier, and eat less bread, that had to go. Toast for breakfast always left me reaching for the biscuits mid-morning, so I needed to switch to a breakfast that would fill me up till lunch. I love porridge, but somehow never think to actually make it in the morning. Plus when I do, I would pile on the jam or sugar, kinda cancelling out goodness!

So the other morning I decided to make myself a tasty, healthy bowl of porridge for breakfast. Apple, nut butter, a little cinnamon and a touch of honey all topped off with some sunflower seeds for a little added crunch. The result was a delicious breakfast that kept my tummy happy all the way to lunchtime!

You’ll Need:

{enough for two servings}
1 cup porridge oats
1 tbsp honey
1 tbsp nut butter
1/2 tsp cinnamon
1 large apple, grated
1 cup water
1/2 cup milk

Place everything into a saucepan, put over a low heat and cook for 5-10 mins until thickened and softened. You can add a little more liquid if it needs it. Top with some sunflower seeds and tuck in!

    Yum! I eat a lot of porridge because Talitha is obsessed with it but yeah, I lay on the sugar. Would love to try this. I imagine the peanut butter makes it really filling.

Suggesting that Apple should stick a woman at the top, just because of her sex, seems like the height of folly.

    I am always trying to load Ebony up on peanut butter, and I had never considered adding it to her porridge before. I will give it a go tomorrow and see what she says :) x

    Interesting, I can’t imagine what this must taste like! I do love porridge, I have it with maple syrup usually but my favourite with sugar and cream, definitely not healthy!! x

    I know porridge is meant to fill you up but I am always hungry an hour later! Maybe the nut butter would help with this I will have to give it a try.
