Healthy Granola Bars

We’re planning on trying out a few different variations this coming week, including some chocolate ones, and Lola wants to try some with Maple Syrup instead of the honey! You could also add in some dried fruits to these. I used sunflower seeds and pumpkin seeds as that was what I had, but use any combination of nuts/seeds that you like! These were SO good, and healthy too! Even G liked them! They hit the spot perfectly, and were just sweet enough to satisfy, but not too sweet. If you’re trying to eat healtheir too, this is a great list of everyday foods that are so terrible you should avoid them!
You’ll Need:
1 1/2 cups toasted oats
1 cup dates
1/4 cup peanut butter
1/4 honey
1 cup mixed nuts/seeds
Heat the peanut butter and honey together, pulse the dates in a food processor until they’re in teeny pieces, then mix everything together. Pour into a greased 9×9 pan and leave to set. Cut into bars or squares and enjoy. These were perfect with a cup of earl grey! They’d make a great pre or post workout snack too.

February 17, 2014 at 15:04Cor, they look lovely! We’re big granola and flapjack fans here, so I’ll give these a go. I’ve heard a lot about clean eating lately – although I’m not sure I’d ever be able to give up chocolate. Or cake!

February 17, 2014 at 15:09haha!! yeah… chocolate and cake are my downfalls… I’m figuring that I’ll go by the 80/20 rule…. eat healthy and clean 80% of the time, and then I can still have some chocolate and cakes every now and then ;)

February 17, 2014 at 19:30Looks delicious! I usually tend to eat junk food in the winter months and I hate that I do that! With spring coming up I will definitely be working out more and eating more healthy meals. These granola bars look yummy so I will be trying them out!

This might seem like a very silly question but do TOASTED oats differ to regular porridge oats.
I live in Dublin and searched the shops and can’t find TOASTED oats!
I made these but they were a little soft and I think it is because the oats absorb the moisture of the honey rather than it acting as a glue.
