Organic Muffins
The recipe for this weekends cakes came from EcoMarket.com‘s blog. They have some great DIY ideas on there. Miss Lola whipped up a batch for our picnic dinner by the river on Friday night, then I made a double batch on Sunday to share with friends. They were delicious and easy to make – we love Green and Blacks chocolate! When I made the double batch, after I’d put half the mixture into cake cases, I added in a teaspoon of cocoa powder too to make double chocolate muffins – yum!
You’ll Need:
??150g (5oz) organic plain flour
1/2 tsp baking powder
1/4 tsp natural salt
1 large organic egg
40g (1 1/2oz) Fairtrade caster sugar
125ml (4fl oz) organic milk
50g (2oz) unsalted organic butter, melted
100g organic chocolate (white, milk or dark) broken into little pieces. We love Green and Blacks range of cooking chocolate.
Making the muffins:
Preheat your oven to 200C / 400F / Gas Mark 6. Mix together the egg, sugar, milk and melted butter in a bowl, then sift the flour, salt and baking powder into the bowl and mix it all together. Add the small pieces of broken up chocolate and give it a good stir
Spoon the mixture into muffin cases so that they are 2/3 full and bake for 20 minutes. They should be springy to the touch.
