8 delicious vegan salads to spice up lunchtime
I’m a huge salad lover. In the past year, I’ve totally overhauled my diet, and re-educated my taste buds. Gone are the days I lived on bread, cheese, crisps and packets of biscuits. Lunch these days is almost always a salad of some kind. More often than not, I just throw together whatever I have in the fridge, always a base of lots of leaves, cucumber, tomatoes, spring onions, peppers, leftover roast veg if there are some, hummus, either tofu, lentils or some beans, maybe an avocado, and a sprinkle of seeds.
As delicious as it is, I’d like to start being a bit more organised and making myself some of the amazing sounding salads that I have pinned over the last year! Here are eight of my favourites – they all sound absolutely amazing, I can’t decide which to make first!
1| Healthy summer tomatoes, basil and chickpea salad – Bursting with flavour, it’s vegan AND gluten free! This would be delicious served with a baked sweet potato.
2| Spiced Carrot and Chickpea Salad – I love spicy things, and this sounds so good.
3| Sun-dried tomato lentil salad – taking just twenty minutes, this is perfect for a quick lunch.
4| Mediterranean Chickpea Salad – another quick recipe, I’d just switch the feta for a vegan cheese or some tofu
5| Sweet Potato, Pomegranate & Crispy Quinoa Salad – three of my favourite things in one dish? Yes please!
6| Warm Cumin Roasted Carrot, Red Onion, and Lentil Salad – a warm salad is perfect for cooler days, when cold food just doesn’t appeal!
7| Mango, Black Bean & Avocado Quinoa Salad – perfect on its own for lunch, or as a side for dinner.
8| Roasted Cauliflower Salad with Lemon Tahini Dressing – I LOVE roasted cauliflower, can’t wait to try this out!
