Bake it: Apple & Cinnamon Loaf
We had friends coming the other dya, and I’d planned to make a lemon cake. Until Baya said “Can you make cake with apples??” So apple cake it was. Apple & Cinnamon is one of my favourite combinations – usually stick to making it in the autumn, but even on a warm summers day, this turned out to be perfectly delicious!
I N G R E D I E N T S
200g self-raising flour
75g butter
100g soft brown sugar
1 tsp cinnamon
3 eggs
3 apples, peeled, cored and finely diced
1 apple, peeled and finely sliced.
Jam to glaze
1// Grease a 1.5lb loaf tin, and line the bottom with greaseproof paper 2// Rub the butter into the flour until it resembles breadcurbms 3// Stir in sugar, cinnamon and the apple chunks 4// Mix in the eggs 5// Pour in cake tin, and lay the apple slices along the top of the mixture 6// Bake at 180C for around 45 minutes 7// Glaze the top with a tbsp of jam – I use apricot and leave to cool.
This cake is lovely and moist, perfect buttered with a cup
