Recipe || Sweet Potato and Spinach Hash with Poached Eggs

I made this for our dinner the other evening, sweet potatoes are one of my very favourite things to eat, and this was a quick and easy dish to make once we’d gotten the kiddos tucked up in bed. It was delicious and really filling too! We all eat together a few nights a week, but on nights where the kiddos are in and out and having to be taken to various groups, I’ll feed the kids and then we’ll eat once they are all sorted out.

You could easily switch up what additions you throw in with the sweet potato – it would be a great way of using up leftover veggies!

I N G R E D I E N T S

2 large/4 small sweet potatoes

Big handful spinach

1 onion, finely sliced

2 cloves garlic, crushed

Butter

M E T H O D

* Peel and roughly chop half of the sweet potatoes, place in a pan of boiling water and boil until tender {around 10 minutes}

* Peel and dice the other half of the sweet potatoes. Melt some butter in a frying pan, add the sweet potatoes and cook for 5 minutes, then add the onion and garlic. Cook for another 5 minutes. Add in the spinach.

* When the boiled sweet potatoes are finished, drain and mash. Add them to the frying pan with the remaining sweet potatoes, onion and garlic.

* Bring a pan of water to a boil and poach your eggs {I’m not the world’s best egg poacher, they don’t always look good but they still taste ok!}

* Divide the sweet potato mixture between two plates, top each plate with two poached eggs and enjoy!
