A family meal plan for January

I didn’t bother making a meal plan for December, come the festive season my meal plan always goes out of the window! The past couple of weeks we seem to have had picky dinners most nights… a table laden with cheese, crackers, crisps, crudites and party snacks. YUM. Now, however, I am so ready to be back to meal planning and eating anything that isn’t an onion bhaji ha!

It’s a month full of warming foods, family favourites that I know everyone will like, quick weeknight dinners as we’ll soon be back to all the girls evening groups which means rushing around from one place to another every night of the week. I try and make the main dish that will suit all of us, and add on side dishes and vegetable options so there is something for everyone.

Here’s what we’ll be eating for the first month of 2018:

~ Fried Rice, Vegan Fish Fingers, homemade mushy peas
~ Mexican Bean and Tomato Soup
~ Jacket Potatoes, Smokey Baked Beans
~ Ratatouille, Pasta
~ Roast Veg & Brown Rice
~ Veg Balls, Sweet Potato Mash, Veg
~ Picky Dinner
~ Gnocchi, Pesto, Corn Cobs
~ Pasta Bake
~ Chickpea and Veg burgers, Wedges
~ Coconut Rice Bowls
~ Nachos, Sweetcorn Salsa
~ English Muffin Pizzas
~ Picky Dinner
~ Butternut Squash & Sweet Potato Soup
~ Coconut & Spinach Dahl
~ Spaghetti, Garlic Bread, Salad

    Oh wow! You are so organised! I meal plan but only a week at a time.
    You have a lot of very tasty meals planned :D x

      Thanks! I used to do weekly, but find monthly even easier and less time consuming!
