Recipe | Vegan Choc Chip Oat Cookies

A couple of rainy days at the beginning of last week gave us the perfect excuse to stay home and enjoy some quieter days. Tuesday I was informed, was Baya’s Build-a-Bear’s birthday {and Beastie joined in with it being Pando’s birthday too}. I promised them a tea party celebration lunch – and no birthday tea party is complete without cookies – especially when it’s wet and cold outside!

I whipped up these cookies in the morning and had to resist the temptation to eat them all fresh out of the oven. Nothing like a warm cookie! They’re quick and easy to make, relatively healthy {as far as cookies go} vegan, gluten free AND refined sugar-free – but most importantly, they taste SO good. Everyone said they were the best cookies we’ve ever made!

I N G R E D I E N T S

170g dairy free spread

100g coconut sugar

1 tsp vanilla extract

200g gf oat flour

75g gf rolled oats

100g dairy free choc chips

Recipe | Vegan Choc Chip Oat Cookies

M E T H O D

First, to make the oat flour, measure out your oats, pop in your blender and blitz into a powder.

Then, cream the spread and coconut sugar together and mix in the vanilla.

Stir in the oat flour, rolled oats and chocolate chips, and bring together into a dough

Take golf ball size pieces, place onto a greased baking tary and flatten slightly with a fork.

Bake for around 10 mins, at 180C, leave to cool slightly before you devour them!
