Tomato Soup for the Soul

Rainy days call for comfort food, movies and board games. Miss Kiki took a nasty tumble on Friday night, we’d spent the evening watching a band in our local park, five minutes from the end she managed to go headfirst over her scooter handlebars and land on her face. She split her lip open and grazed all the left hand side of her face. I spent the rest of the evening in A&E getting her lip glued back together and the gravel washed out of her face :(

Her face was so swollen all weekend, poor baby could barely open her left eye… I made her favourite tomato soup yesterday, easy to eat when you’re swollen and sore! She’s been dosed up on arnica, I think she’s going to have a black eye when the swelling finally goes down.

You’ll Need:

1 large onion
2 tins tomatoes
2 cloves garlic
1 tsp smoked paprika
1/2 cup red lentils

Saute the onion in a little oil for five minutes, add in the garlic {crushed or chopped} and the paprika, cook for another minute then add in the tomatoes, lentils and a can of water. Bring to a simmer, and cook for 20 minutes. You can blend this if you like, or leave it chunky. I blended ours, added some mini pasta shapes and grated bread and served it with freshly baked bread.

Poor Kiki, hope she’s feeling better now and is healing quickly. I’ve had tomato soup for lunch the last couple of days, but yours looks and sounds much nicer! :-) Definitely something to try in the future!
