Valentine’s DIY – Sweetheart Cupcakes

Today’s DIY is for some delicious cupcakes. Pink and heart-shaped make them a perfect
Valentine’s treat. They’d be great to take to work or for a get together with friends.

40g ground almonds
1/2 tsp baking powder
110g self-raising flour
110g butter
110g caster sugar
2 large eggs
1 tsp vanilla extract
red food colouring
for the icing: 
75g icing sugar
red food colouring
12 marbles

Preheat the oven to 180C/350F/Gas 4.Cream the butter and sugar together.
Beat in the eggs, vanilla extract and a couple drops red food colouring.

 Stir in the flour mixture until combined

Spoon the mixture into paper cases, and then tuck a marble into each hole
in the tin, between the case and the tin itself. (This gives you a heart shaped cake :) )

Bake for 10-15 minutes, and allow to cool fully.

 Mix the icing sugar with enough water to give the consistency 
of single cream. Add a few drops of food colouring. Pour/spread over each cake.
I added some gold and silver sugar pearls sprinkled over the top of each cake too.
There you have a dozen of the most fabulous looking (and tasting) cakes!
