Recipe: Lemon and Lime Cake

With a friend calling in for tea, cake & a good natter the other day, I threw together a quick cake before she arrived. Lemon cake is one of my favourites – quick and easy, and always delicious. I had a lime that needed using up, so figured I’d go off the path just a little… it was a good decision, as this was even more delicious than a plain lemon cake!

I N G R E D I E N T S

100g/4oz butter

100g/4oz caster sugar
2 large eggs
100g/4oz self-raising flour
1 lemon
1 lime

D I R E C T I O N S

1| Preheat oven to 190°C/375°F/Gas 5.
2| Cream the butter and sugar together in a large bowl. Add the eggs and mix well.

3| Stir in the grated lemon and lime zest and the juice

4| Fold in the flour in lightly until it’s just combined

5| Pour the mix into a greased cake tin, and bake for around 25 minutes.

6| Leave to cool in the tin, then turn out and enjoy!!!

You could mix a little lemon/lime juice with icing sugar to make a glaze if you’re feeling really naughty!
