Recipe | Chocolate Chip Cookie Cake

One of the best things about having kids, is having kids who can bake you cake right?! Now the girls are big enough to bake by themselves, we always have cake in the house – they love baking and don’t need telling twice to get in the kitchen! The other day Kiki and Baya wanted to make something, but couldn’t agree on cookies or a cake – so I told them to make this cookie cake. Win win! We actually ended up making this twice last week that’s how good it was!

It’s pretty quick and easy to mix up, and is equally delicious served warm for dessert with ice-cream, or cold the next day with a cup of tea {if it lasts that long}.

I N G R E D I E N T S

170g butter
200g caster sugar
250g plain flour
1 tbsp cornflour
1 tsp baking powder
2 tsp vanilla extract
2 eggs
Pinch of salt
200g choc chips

D I R E C T I O N S

* Preheat the oven to 180C, grease a 9-inch cake tin

* Cream the butter and sugar together, then mix in the flax egg and vanilla extract

* Fold in the dry ingredients, then mix through the chocolate chips

* Pour the batter into your cake tin, levelling off,

* Bake for around 30 minutes – cover half way with tinfoil so it doesn’t brown too much.

* Remove from the oven and leave to cool slightly. Serve warm with ice-cream, or leave to cool completely and cut into squares.
