Light & fluffy, 3-ingredient vegan pancakes

Happy Pancake Day! I don’t know about you, but my kiddos and I love Pancake Day! In fact last year, Kiki refused to let me rub Pancake Day off the calendar, so we had a pancake day on the 28th of every month haha!!

Since going vegan last year {and being mostly gluten free}, I’ve tried out several different pancake recipes, but these are by far my favourites. Light and fluffy, super tasty, easy to cook, only three ingredients – dairy free, egg free, refined sugar-free and easy to make! They’re the perfect recipe for any time of the year. So good in fact, I might well be eating nothing but them all day long.

I N G R E D I E N T S {makes 4 mini pancakes}

1 banana

1 cup gluten free oats

3/4 water

 

M E T H O D

Place everything into a blender, and blitz until smooth. Heat a little coconut oil in a good, non-stick frying pan and add around 1/4 of the mixture. Cook for a couple of minutes, flip and cook for another couple of minutes.

Top with whatever you love best on pancakes – I had raspberries, blueberries and a good drizzle of peanut butter!
