Recipe | Coconut Banana Breakfast Pudding Bowl

Now, I’m pretty much a porridge for breakfast every single day kinda gal… but this may be good enough to change that! I always used to love banana custard, ever since I was little. Warm and sweet, it tasted of comfort and childhood and joy. Anyway… I went vegan AND I cut out refined sugars AND started eating clean, so banana custard isn’t something I’ve had in what feels like forever.

One day last week, it was cold and overcast, and I woke up with a serious case of the ‘MEH’s’ {you know the ones}, and I wanted something to eat that was like giving myself a great big hug first thing in the the morning. I don’t have a sweet tooth anymore, but that day I was craving a little sweetness. So, I threw a few things together and came up with this absolutely lush coconut-banana-pudding-for-breakfast-bowl of amazingness. Yes, it is THAT good.

I’ve made it a couple lot of times since, and not just for breakfast. It makes a great dessert or snack or supper oany timeme of the day pick-me-up. It’s quick and easy to make, uses store cupboard items and is good for you to boot. What more convincing do you need?!

I N G R E D I E N T S  {serves one}

2 bananas, sliced

1/2 cup Coco Coconut Milk Alternative

1/4 cup desiccated coconut

1 tbsp chia seeds

1/2 tsp cinnamon

1 tbsp nuts/seeds – {I used pumpkin and sunflower seeds in the photos, though crushed pecans or walnuts are good too}

 

M E T H O D

Pop everything into a pan, put over a medium heat and bring to a boil, turn right down and let warm through for five minutes. That’s it! I sprinkle a little omega seed mix over the top for extra goodness and flavour.
