It’s October and officially Autumn. There’s a definite chill in the air, the lawn is damp in the mornings and my sandals have been packed away until next year {sob}. I spent a bit of time pulling together some meal ideas for my Autumn Meal Plans {which I’ll start sharing again!}. It’s time to think about warming soups, spicy chilis and lots of roasted root veg. I love to have a ‘master list’ of meal ideas – it makes filling out the meal planner each week so much easier. I could spend hours drooling over food on Pinterest – only problem is, it’s usually the middle of the night when I do this, and then I struggle to sleep as I’m hungry! Here are a few of my favourite meal ideas for this Autumn.

30-minute Roasted Garlic Cauliflower Chowder – this sounds delicious, and is speedy so perfect for those nights when all the kiddos have groups!

Shredded Chicken Chili – we love Chili, and I love the idea of a chicken version for a change!

Vegan Shepherd’s Pie – while I do eat meat these days, I try not to eat it every day, and this vegan shepherd’s pie sounds delicious

Cheesy Pumpkin Pasta – Pasta is always a winner, and cheese and pumpkin sounds like a perfect combination

Sausage, cheddar and mushroom Pasta bake – this would be good, as I could make it earlier in the day ready to bake in the evening.

One pot, Autumn Chicken Dinner – one pot dishes are always good – and how tasty does this look?

And I love roasted veg – this Roast Beetroot and Sweet Potato might be my new favourite side dish to have with every meal!!

    Ah this is comfort on a page! There’s something so cosy and comforting about stews and casseroles at this time of year. Our favourite is Firecracker Sausage casserole which uses red onions and apples, along with fat sausages, chilli sauce and unsweetened apple juice. I love it, it’s such an autumnal recipe!
