Recipe | Healthy Beef & Bean Burger

Meal planning means that we get to eat a variety of delicious meals each week, as well as making sure I’m feeding my kids good, wholesome healthy foods. I don’t think there is anything wrong with a little treat now and again though, and my kids {like many other} love fast food. We rarely buy burgers and chips out, it’s usually a last resort if there is nothing else to be found {especially when we have one super fussy eater}, but sometimes I’ll cook burgers and chips at home – it’s a great Friday night treat>

Ramsey Health Care asked me to take part in their ‘Healthy Fast Food Alternatives’ campaign recently, and I figured what better than a healthy burger and chips meal?! The benefit to cooking it at home means that I can ‘healthify’ the meal – keeping it just as delicious and tasty, but cutting out some calories/fat/rubbish that comes with buying it at a fast food restaurant.

I made some yummy beef and bean burgers, made with mashed Red Kidney Bans {which are really good for you!} and lean steak mince. I swapped the usual salt-laden chips for some tasty sweet potato fries, cooked in coconut oil, and served it all with some fresh salad. The meal was full of flavour and really satisfying – usually after I’ve eaten a burger and chips I feel a bit icky from all the fat & grease – there’s none of that with this healthy version! So you can enjoy guilt free.

beef burger, salad, sweet potato fries

I N G R E D I E N T S

200g can red kidney beans
400g lean steak mince
1/2 cup fresh breadcrumbs
1 egg
3 large sweet potatoes
Coconut Oil
Seeded bread buns

M E T H O D

1| Put the mince, mashed kidney beans, breadcrumbs and egg into a bowl. Combine and shape into 8 small patties. Pop in the fridge for 15 minutes to firm.

2| Meanwhile, peel and cut the sweet potatoes into chips. par boil for 5 minutes, allow to drain. Place in a roasting tin and spray with coconut oil. [
Sometimes I sprinkle a little paprika over the sweet potato fries before baking}

3| Pop the sweet potato chips into the oven {180C} for 25/30 minutes – turning halfway and coating with a little more coconut oil.

4| Spray a non-stick pan with oil, over a medium heat cook the burgers for around 5 minutes each side, until cooked through.

5| Pop your burger in a bun, top with some sliced onion, tomato and a dollop of guacamole. Serve with the sweet potato fries and a side salad.

You could easily switch the beef mince for a soya mince to make these vegetarian. The burgers will freeze well – so you could make up a double batch, and freeze half before cooking for another day. I often pop all the components on the table and let the kiddos build their own burger.
