Slow Sundays and perfect pancakes

We usually opt for thick, American-style pancakes – one because I;m rubbish at making big, thin ones! Also, I can cook multiple small ones at once – vital when you have a table full of small hungry people! We’ve just discovered the joy that is pancakes, bacon and syrup – oh my! I don’t know why I waited so long to try this it is AMAZING! In an attempt to make our Sunday breakfasts a little bit healthier, we’ve switched to coconut flour and oil and also I’ve been trying out having agave nectar instead of my usual mountains of maple syrup! {We get ours from The Groovy Food Company fyi}. Add in some berries and orange wedges and I don’t’ have too much Mama guilt.

{I double this recipe to feed all six of us}
150g flour {I use coconut but ordinary plain flour is fine}
1tsp baking powder
2tsp agave nectar
2tbsp coconut oil, melted
150ml milk
1 egg
I throw everything into a jug, mix lightly with a fork and then blast with my electric whisk for a minute or two until smooth and lump free. It should be thick but runny. Heat a frying pan and spray with a little cooking oil. Drop tablespoons of the mix onto the hot pan {I can usually cook 3 or 4 at a time}, cook until it bubbles, then flip and cook for another minute.
We love ours with bacon and syrup right now, but we also like nutella, sugar, freshly squeezed orange or lemon, golden syrup and on occasion ice-cream on our pancakes. What do you like on your pancakes?
