Slow Sundays and perfect pancakes

Sundays in our house usually mean pancakes. More often than not, it’s the only day of the week that we’re not rushing around, working or trying to complete to-do lists. Sundays are my slow day. A day with no work, no commitments, not too much online time, and a focus on family time. I usually mix up a batch of batter when I first wake up and leave it ready for when everyone finally stumbles out of bed.

We usually opt for thick, American-style pancakes – one because I;m rubbish at making big, thin ones! Also, I can cook multiple small ones at once – vital when you have a table full of small hungry people! We’ve just discovered the joy that is pancakes, bacon and syrup – oh my! I don’t know why I waited so long to try this it is AMAZING! In an attempt to make our Sunday breakfasts a little bit healthier, we’ve switched to coconut flour and oil and also I’ve been trying out having agave nectar instead of my usual mountains of maple syrup! {We get ours from The Groovy Food Company fyi}. Add in some berries and orange wedges and I don’t’ have too much Mama guilt.

R E C I P E

{I double this recipe to feed all six of us}

150g flour {I use coconut but ordinary plain flour is fine}
1tsp baking powder
2tsp agave nectar
2tbsp coconut oil, melted
150ml milk
1 egg

I throw everything into a jug, mix lightly with a fork and then blast with my electric whisk for a minute or two until smooth and lump free. It should be thick but runny. Heat a frying pan and spray with a little cooking oil. Drop tablespoons of the mix onto the hot pan {I can usually cook 3 or 4 at a time}, cook until it bubbles, then flip and cook for another minute.

We love ours with bacon and syrup right now, but we also like nutella, sugar, freshly squeezed orange or lemon, golden syrup and on occasion ice-cream on our pancakes. What do you like on your pancakes?

    Sounds great. We did pancake night tonight as we’re busy tomorrow – although I pretty much will take any excuse for pancakes!

    We totally missed pancake day this year in new baby haze! I do love them though, I need to check out cooking with coconut oil! xx
