Ah…. Gingerbread Cake… It just screams ‘AUTUMN’ to me. Autumn days are the best time for baking, and there are so many delicious autumn-y recipes that I love making. One is this quick and easy gingerbread cake. It takes just a few minutes to make and every bite really does taste of autumn with it’s sweet, ginger-ness. It’s one of my favourite things to whip up on a grey, rainy day. The best thing about it is that it gets better after sitting for a day or two – kept in an air -tight tin, it will become moist and sticky with time. Gingerbread cake is perfect with your morning latte.

I N G R E D I E N T S

350g self-raising flour

150g brown sugar

100g butter

50g honey

50g black treacle

4 tsp ground ginger

150ml milk

D I R E C T I O N S

* Sift the flour and ginger into a large bowl

* Rub in the butter until it resembles breadcrumbs

* Stir in the sugar

* Put the treacle, milk and honey in a pan and heat until melted together

* Pour the wet ingredients onto the dry, and mix well.

* Put the mix into a greased baking dish {appprox 20″x20″}

* Bake at 170C for around 30 minutes

    I LOVE gingerbread cake. This is something I used to make as a kid so it has a huge element of nostalgia for me. Going to try this recipe this weekend!

    That’s funny, my kids were just saying last weekend that they wanted to make ginger biscuits or cake. We never got around to it for bonfire night but this looks so delicious I’ll try it out soon I reckon. Thanks! x

    mmm my favourite, it looks so yummy, will try out your recipe but swap the milk and butter for non dairy ones and hope it comes out as good x

      I always make it with Soya milk and non-dairy spread :) Hope you enjoy it!
