Vegan eating

Burrito Bowls // Butternut Squash Pasta // Mexican Quinoa // Honey-Lime Quinoa Stuffed Sweet Pototoes

For the past couple of months, we’ve been making a concious effort to reduce the amount of dairy we were eating. We don’t use cows milk and use a vegan spread – we have ever since Lola was around 5, and suffering from eczema. We cut out dairy to see if it helped her skin. Slowly, though, cheese crept back into our diets, and we ate far too much! I do love cheese, but Papa doesn’t like cows milk, simply because it comes from an animal, and as I don’t eat meat, I find that cheese becomes my main food far too much. It’s all too easy to throw a handful on top of whatever meal you’ve cooked.

Take away the easy cheese sandwich for lunch and at first the thought was a little daunting, but after 8 weeks it’s become second nature to not eat cheese and not automatically sprinkle it on top of my pasta and soup. I’ve been enjoying the flavours of the meals when they’re not masked under cheese, and experimenting with different things to eat.

While I dont’ think of myself as vegan, and Papa eats meat still, I’ve been searching out more vegan recipes ready for the cooler weather. These four recipes all sound perfectly delicious and warming for this time of year – I can’t wait to try them out!

We eat a lot of vegan food too and I don’t like eggs or milk but cheese, it’s such a sticking point. These recipes sound delicious though, the burrito bowls in particular look amazing.

And people say that vegan food is “tasteless” – well they should see these recipes

These all look really tasty! I always look at the veggie options first even though I am a meat eater but cheese is my real weak point!! I could easily go veggie but not sure about ditching the cheese! ;)

Oh my! These looks so yummy. Vegan works really well for us as my husband has to avoid dairy. I love the look and sound of the quinoa stuffed sweet potatoes.

I have been a veggie for years and like you used to mask everything with cheese. There look fab

These look great, in fact I’m going to try one tonight. I really struggle with dinner inspiration, Mr C is allergic to dairy and I stopped for a while but slowly ended up eating it again. Annoyingly I have put on 4 pounds since then, cutting out dairy is the fastest way to lose weight! I feel so much healthier when not eating it too but I end up missing cheese! x

I have to say it’s the one thing I struggle with when it comes to vegan food – I loooove veggies but I just couldn’t find a decent cheese alternative and sometimes it can be lovely to make homemade pizza or have some comforting cheese on toast every now and than – let me know how your cutting down on cheese goes :)

Since becoming gluten free I’ve reached for the cheese a lot more which isn’t great…but oh so yummy. Love the sound of these recipes…I’ve been trying out Qunioa recipes so would love to give the Mexican and the stuffed sweet potatoes a go! x

I’m desperate to try eating less dairy, but I could NEVER give up cheese; brie, stilton, a good strong cheddar with crusty bread and salty butter… I just couldn’t! I completely applaud anyone who is vegan, I just don’t have the willpower!
