Papa and I have been trying to cut out dairy products this past month or so – well, really just cheese. We don’t drink cows milk anyway, and we use a vegan spread. But cheese is our downfall. It’s so darn tasty. Anyway, we decided enough was enough, and we’ve had a good month of barely eating any. So now I have a fridge full of the stuff as we used to eat it with every single meal. It’s only when you stop that you realise just how often you cook a meal and throw a handful of grated cheese on top. Just because.

We switched to a vegan pesto too, which tastes just as good as the cheesey one. This tart is one of my favourite things to eat. I always keep a packet of ready rolled filo pastry in the fridge, this is so quick and easy to throw together and is a great way of using up any random pieces of veg sitting in your fridge. It works well with a variety of sides – I’ve served it for lunch with a salad, with roasted potatoes, jacket potates, homemade sweet potato chips…. anything you fancy!

    I baked something like this recently but Im going to try your version this week. I like the idea of adding pesto to your topping. SImple but effective.

    Oh this sounds really yummy and right up my street – I also don’t drink cows milk but cheese is my downfall, especially since I’ve been pregnant again – have been craving it like mad!

    That looks so yum. I would love to make more stuff like this but my OH doesn’t really like veg, nor do the kids… I guess i should just cook it and make them eat it lol x
