I have to say – this is my new favourite cake! I made it to take with us to Anglesey on Monday, where we met up with friends. I baked it Sunday morning before we went to the Bailey Hill festival and it smelt amazing when it was cooling – it took all of my willpower not to cut a slice right then! We had a slice after lunch on Monday and oh boy it was so good. Light and moist, with a great texture. The lemons and blueberries go so well together, and I’m always a fan of cream cheese frosting! It was such a quick and easy cake to make to – will certainly be making it again and soon!
This looks delicious but typically I’m trying to be good right now so cakes and anything sweet are off the table for me right now BUT when i decide I want something sweet (as a treat) I may need to come back and recreate this for myself! ha! x
Wow this looks amazing, as I write this Matt has just gone to get fish and chips as we are so hungry! I’m not eating dairy anymore though so would have to try and swap the topping for something, something not as nice! x
Oooh this looks seriously yummy, I have been thinking a lot about cake lately and how much I want to bake ones I have never tried before – this is going on that list :)
