Roasted Gnocchi

We hadn’t had gnocchi for ages until the other week, topped with fresh pesto it was delicious. Chatting with a friend, she suggested roasting it in the oven, it sounded so good I thought we’d give it a try! I decided to make the gnocchi from scratch this time too. It was quick, easy and turned out so tasty. The kiddos loved it {next time I need to double up on quantities!} – roasted in the oven gives them such a different texture to boiling them. They are crispy on the outside and light and fluffy on the inside.

You’ll need:

500g peeled pototoes
200g plain flour
1 egg
Salt & Pepper

Place the potatoes in a pan of water, salt and bring to the boil. Simmer for 10 minutes or so, until they are tender. Drain and mash, and leave to cool a little. Once they are cool enough to put your hands in, add in the flour, egg and seasoning. Mix to form a smooth dough.

Turn out, and roll into sausages, approx 1.5cm thick {I made four sausages out of this recipe} Cut each sausage into pieces 2cm long.

Heat a tablespoon of Olive Oil in a roasting pan in the oven, then add in the gnocchi pieces and bake for around 25 minutes. You could add in a sprinkle of rosemary or garlic while they are roasting.

We served ours with honey roasted carrots and a simple vegetable tart sweet potato chunks {blanched} onion and mushrooms fried off, placed on a sheet of puff pastry and topped with a little brie. My current favourite meal – I could eat this every.single.day!

Next time I want to try adding some goats cheese in with the potatoes when I make the gnocchi. What are your favourite things to eat right now?

    yum, yum, YUM!! Roasted gnocchi?! We love gnocchi and I’ve never heard of having it roasted but that looks delicious. I’m all for comforting, warming foods at the moment – curries, stews and chocolate cake!! :)

    Oooh I love Gnocchi and make it when I have the time – such a simple pleasure and sooo tasty with pesto – baking it sounds really interesting and I am going to give that a go for sure

    These look delicious! We’re trying to cut gluten from our diet, and these (with perhaps substituting the wheat flour with rice flour or something) would make a great alternative to pasta. I’ve never attempted making them myself, but they sound really easy!
