Sweet Potato and Butternut Squash Soup

Soup. I love soup, especially through the colder months. There’s something comforting about a bowl of warm soup and some fresh bread. I love that it’s easy to make, you can pack a whole load of goodness in there {and occasionally hide some veggies from the kiddos!!} This one, out of all, is my absolute favourite. Thankfully the kiddos love it too. Tasty, warming and vegan too – it’s perfect for these autumn days.

Sweet Potato and Butternut Squash Soup:{enough for 2 adults and three kiddos!}

You Need: 1 tbsp oil, 2 red onions, 2 cloves garlic, 1 tsp smoked paprika, 3 sweet potatoes, 1 butternut squash, 2 cups veggie stock, 1/2 cup coconut milk, salt + pepper.

Chop up the onions, potatoes and squash first. Heat the oil over a low heat, add the onions and cook for five minutes. Add in the garlic and smoked paprika, and cook for another minute. Add in the potato and squash, then pour over the veggie stock. Let the soup simmer for 20/30 minutes until the veg is softened. Blend the soup, return to the heat and add in the coconut milk and salt & pepper to taste.

Serve with a warm crusty roll, and a sprinkling of super seeds

    Ooooh that looks so scrumptious. It’s definitely going to be added to my menu next week!

    Today is a shopping day for me. . .groceries, and still trying to hunt down a winter jacket for my little one. Picking up my dad so he can join us as he needs some things as well – a good day out and about!
