Peppermint Chocolate Cupcakes

These were Lola’s creations. She loves to bake cakes {and I’m not complaing!!!}, this was what she came up with for some festive treats.

You’ll need:
for the cupcakes –
4oz/125g self raising flour
4oz/125g butter
4oz/125g caster sugar
2 large eggs
1tbsp cocoa powder
for the icing – 
4oz/125g butter
60ml milk
1/2 tsp peppermint extract
500g icing sugar
few drops of green colouring

1) Cream the butter and sugar together till fluffy, beat in the eggs one at a time, and then add in the flour, baking power and cocoa powder. Mix lightly and divide between a dozen cupcake cases. Bake at 180C/gas 4 for around 18 minutes.

2) While your cakes are cooling, you can make the icing. Beat the butter, milk, peppermint extract and half the icing sugar until smooth. SLowly add in the remainder of the icing sugar until it is smooth and creamy

3) add the colouring drop by drop until you get the shade you want.

4) Decorate the cupcakes with the icing, then spinkle over the crushed candies
{we added some festive ribbon round each cake too!}

    That last picture is a tease, now wishing I had a cup of tea to sit down with and some cake :)

    Love the frosting on them!  These look like a winner to me!
